Havana Noche

Overview

Ingredients

  • 5 Year Aged Barbados Rum – 45 oz
  • Espresso – 30 oz
  • Pistachio Orgeat – 30 oz
  • Coconut Water – 45 oz
  • Amaro Lucano – 6 oz
  • Fee Brothers Fee Foam – 15 dashes

Preparation Steps

  1. Pour all ingredients into a Cambro and use an induction blender until the mixture is homogeneous.
  2. Transfer cocktail into a closed container.
  3. Shake and stir container before hooking up.

Bartender Notes
Pistachio Orgeat Recipe:

  • Toast 100 g pistachios in a pot/pan.
  • Add 600 ml warm water to the pot.
  • Add 400 g white sugar to the pot.
  • Add a pinch of cayenne pepper.
  • Bring to a boil, then reduce to low and simmer for 25 min.
  • Turn off heat and let sit at room temperature for 5 hours.
  • Use an induction blender to blend nuts into large chunks.
  • Cover and refrigerate for 24 hours.
  • After 24 hours, strain through fine mesh.
  • Store refrigerated for up to 24 days.

Ingredients

  • 5 Year Barbados Rum – 58 oz
  • Flat Coke or Off Brand Cola – 75 oz
  • Pineapple Juice – 16 oz
  • Lime Juice – 8 oz
  • Liber & Co Ginger Syrup – 4 oz
  • Amaro Braulio – 6 oz
  • Fee Brothers Fee Foam – 20 dashes

Preparation Steps

  1. Pour the cola into a Cambro and stir until carbonation is released.
  2. Store in refrigerator overnight.
  3. Add the remaining ingredients to the container.
  4. Stir or shake before using.

  • Whey – 10 oz

Preparation Steps

  1. Stir all ingredients into a container until combined.

Bartender Notes
Whey:

  • Bring 1 L whole milk up to 165°F.
  • Add 5 oz lime juice and stir.
  • Let sit for a few hours.
  • Strain through coffee filter or nut bag until all solids are removed (may take 2–3 filters).

Citric Acid Solution:

  • Combine 70 g citric acid with 1000 ml warm water.
  • Stir until completely dissolved.
  • Pour into a juice bottle and refrigerate.
